Hummus: A Family Recipe

I love hummus. But I love good hummus which is hard to find fresh at a decent price. Last year while visiting my Aunt in Texas I tasted the most amazing hummus I've ever had. Her hummus was chunky, tangy with a subtle kick. I loved it so much that I had to plead for the recipe. And here I share my findings with all of you. Enjoy :-)



Ingredients:


-30 oz can of drained chickpeas
-1/2 cup of chickpea juice (reserve when you drain)
-Juice of 2 lemons or more
-2 cloves of crushed garlic
-2 tbsp of sesame seed paste (tahini)
-2 tbsp of olive oil
-1 tbsp cayenne pepper
-1 tbsp of cumin powder
-1/2 tsp of salt

Blend everything together in a blender. I suggest you start off with the chickpeas and spices and half the liquid. Add the rest of the ingredients slowly. I like mine lemony and spicier. For more of a Tahini-like hummus, add more liquid. Serve chilled with drizzled olive oil and crispy pita or warm French bread.
